As well as Christmas there is the ultra-important secret festival that home cooks up and down the UK revere…Seville orange season.
In the UK we tend to say ‘Seville’ to rhyme with ‘ill’ but the proper Spanish would be ‘Se-BEE-ya’. Much sexier.
These are sour oranges, they have absolutely no glucose in them. They are sort of the lemon equivalent of oranges. We can’t get enough of them but please don’t try to eat them raw as if they were normal oranges, one of our customers came in and told us that they’d tried this and we could only apologise for not labelling them more clearly!
But they make a lovely change from lemons, you can dress winter salads with the juice and zest particularly if you’re combining raw roots and nuts for a vegan coleslaw.
Marmalade is what most people buy these for and there’s something very Christmassy about having a pan of preserves bubbling away in the background. The great thing is they’re full of pectin so this is a preserve that tends to set really well.
